Chocolate Financiers for the New Year
Bringing in the NEW YEAR: 2007
-3 ounces Valrhona Carraibe (or other bittersweet chocolate)
-3 ounces unsalted butter
-2/3 cup confectioner's sugar
-1/4 cup all purpose flour
-1/2 cup almond meal
-3 egg whites
-1 tablespoon honey

1) Melt the chocolate over a bain. Set aside.
2) Slowly brown the butter, then add to chocolate.
3) Add the remaining ingredients in order, combining with a wooden spoon.
4) Rest financier batter for 1 hour.
5) Bake in financier molds or other small tin molds: 350F.
6) Pull from oven as edges are set but center is still loose.
7) Unmold and serve warm.
